How Do You Grow Truffles? The Point Where It Stops Being Worth Doing
You grow truffles by planting oak or hazelnut seedlings a nursery has already colonized with Tuber melanosporum (the Périgord black truffle), in well-drained soil at pH 7.5 to 8.5 with exchangeable calcium typically near 5,000 ppm, at roughly 250 to 400 trees per hectare, then irrigating 20 to 30 millimeters in production summers and waiting five to 13 years. Inotruf’s Guide to Trufficulture sets that pH band and the 5,000 ppm calcium figure (range 1,000 to 12,000 ppm). Chevalier and Grente’s nursery rate 4, reprinted in Murat (2014), is 70 to 90 percent of root tips colonized. A 2024 Plant and Soil review, “Status of truffle science and cultivation in North America,” records commercial North American yields of 1 to 39 kg per hectare, averaging 15 kg/ha, and first fruiting at 5 to 13 years (mean about 8). The work stops being worth doing when the soil test, the colonization record, or the water right is missing.
When does growing truffles stop being worth doing?
The cutoff is a records problem. A limestone county does not substitute for a colonization certificate, any more than a numbered pole card settles who owns the transformer. CCD-CP-83 is blunt on cash: land preparation is slow and expensive, inoculated stock can fail, and markets are already held by people who produce. Heather E. Alvis’s 2001 Oregon State University thesis, advised by mycologist Charles Lefevre, put establishment at about $35,000 per acre. Kaiser and Ernst later wrote that 2015/16 costs had fallen toward $15,000 to $20,000 per acre.
Revenue at the North American mean does not close that gap. Fifteen kilograms per hectare at the January 2026 Carpentras producer quotation of EUR 400 per kilogram for Tuber melanosporum category I, recorded by DRAAF PACA and FranceAgriMer’s Réseau des Nouvelles des Marchés, is EUR 6,000 per hectare in a producing year. At 2.47 acres per hectare, CCD-CP-83’s lower band is about $37,000 per hectare before the first truffle. The 2024 Plant and Soil review cites 15 to 40 kg/ha outside North America (Eslick 2016; Lefevre and Hall 2001) and more than 100 kg/ha from Chevalier and Frochot (1997). At 100 kg/ha and EUR 400/kg, that Carpentras line is EUR 40,000 per hectare in a good year. The orchard only pays if it reaches that second sheet.
Ehren Jordan, then general manager at Turley Wine Cellars in California, told Forbes in 2005 what the empty years feel like from the operating side:
> “It seemed like the ultimate snake oil deal: ‘Here, plant these trees, pay me a bunch of money, and in seven years you might have something.’”
Larry Turley, the owner, had 2,600 inoculated oak and hazelnut seedlings at $16 each. Some Garland trees, he told the magazine, “were completely naked, untouched by melanosporum.” Lefevre’s trees, Jordan confirmed, had mycorrhizae. The dollars went in before the root inspection.
Three other gates close the file before lime is ordered. Inotruf: “If you don’t have enough water, it is better not to plant.” CCD-CP-83 wants the site open, slightly sloped, south-facing, free of trees and tree roots, and irrigable, and names birch, beech, hazelnut, oaks, poplars, willows, and conifers as competing hosts. Oliach et al. (2020), cited in the 2024 review, found trees near a forest edge more likely to pick up contaminant fungi. Chevalier and Sourzat (2012) link low Tuber mycorrhization on those roots to poor harvests. A field that fails water, open ground, or distance from woods is a tree planting with a gourmet story attached.
How do you grow truffles, and how is that different from a mushroom kit?
Truffles are ectomycorrhizal. The fungus sheathes living fine roots and takes sugars the tree made. Oyster, shiitake, and button mushrooms are saprotrophic: they live on dead substrate. Kaiser and Ernst draw that line on page 1 of CCD-CP-83: with the exception of morels, mycorrhizal mushrooms “will generally not fruit in the absence of the host.” Mirco Iotti, Federica Piattoni, and Alessandra Zambonelli, in their 2012 chapter on host-plant inoculation, state the consequence: it is impossible to produce mature fruiting bodies of Tuber spp. on organic substrates, as is done with saprobic edible mushrooms.
Charles Lefevre, Ph.D. in forest mycology from Oregon State University (2002) and founder of New World Truffieres in Eugene, told Capital Press in 2015:
> “Mycorrhizal fungi and mycorrhizal trees never live without each other. You don’t have to trick them.”
François Le Tacon and colleagues, using ¹³C pulse labeling on hazel with T. melanosporum, showed that almost all of the truffle’s carbon comes from the host (Le Tacon et al. 2013, 2015). An indoor truffle growing kit with a bag and a weeks-long harvest window is selling the saprotrophic workflow.
The method that fruits is nursery inoculation, then out-planting. Gérard Chevalier and Jean Grente harvested T. melanosporum from out-planted Corylus avellana 4.5 years after planting in 1977 (Chevalier and Grente 1978, reviewed by Guerin-Laguette in Mycoscience, 2021). Lefevre’s firm has shipped seedlings to 45 of the 48 contiguous states. Franklin Garland of Garland Truffles is the other large U.S. supplier named in the 2024 review.

Growing truffles without trees is the kit error in a different package. Tuber magnatum is still largely uncultivated; Lefevre told Forbes in 2005 that nobody had yet managed it as a farm crop. Truffle spores for sale, as a slurry for an existing oak, are the cheap version of that error. Kaiser and Ernst call broadcast spawn “highly unpredictable in establishing a new planting.” APHIS may deny mycorrhizal inoculum imported as a finished product. The matching product is a container-grown, independently checked oak or hazel from a U.S. nursery.
What soil pH and calcium concentration do truffles need?
Inotruf, a Sarrión, Teruel nursery with more than 25 years in T. melanosporum seedlings, tells planters the pH in water should be 7.5 to 8.5, and recommends a KCl pH because it is more stable. Kaiser and Ernst set 7.5 to 8.3 for European truffles on Kentucky ground. Lefevre’s 2014 Napa County WICC packet calls 7.5 to 8.3 suitable and 7.9 ideal. Perigord Truffles of Tasmania treats pH 7.5 (1:5 water) as acceptable and 7.9 to 8.1 as maximum production; Ian R. Hall used “above 7.5 with an optimum of 7.9.”
Calcium is a second measurement. Inotruf’s exchangeable calcium line is “quite variable, although most plots with good yields generally have 5,000 ppm,” range 1,000 to 12,000 ppm. One high-yield parcel in that guide (yields above 70 kg/ha/year) showed 6,992 mg/kg calcium by ammonium acetate. The TRUMAP handbook compiled by Carlos Colinas and colleagues states that if calcium carbonate is not present in stones, soil concentration must exceed 1 percent and may reach 83.7 percent (Bencivenga and Granetti 1988; Poitou 1988; Raglione et al. 2001). Exchangeable calcium is listed as 0.4 to 1.6 percent CaO.
Liming acidic U.S. ground is the first place a project dies on cost. Hall, in “Cultivation of truffles on acidic soils – the consequences of liming,” reported about 2 tonnes of lime per hectare for each 10 cm of soil treated, and more than 50 tonnes per hectare on particularly acidic soils. The most acidic soil that had produced Périgord truffles in that New Zealand record was volcanic ash at natural pH 5.3. The Napa packet says lime can take two or more years to have its full effect, and that the majority should go on before planting. CCD-CP-83 tells Kentucky growers most of the state’s soils will need lime, and the process is “costly and slow.” A pH of 5.5 on a buffered loam is a two-year lime program with a second soil test before anyone orders trees.
How is target truffle colonization verified before planting?
Verification is a root inspection plus a species test, done before the trees leave the nursery. Morphology under a stereomicroscope shows whether root tips carry Tuber-type ectomycorrhizae. DNA (species-specific PCR) shows whether those tips are T. melanosporum rather than T. brumale, T. borchii, or a look-alike. Kaiser and Ernst tell buyers to require a certificate that the roots carry the desired species and are free of contaminants, to ask for the percent of roots infected, and to use independent labs “should there be any question.”
Chevalier and Grente’s nursery rating, reprinted in Murat’s 2014 review “Forty years of inoculating seedlings with truffle fungi,” is the scale those percentages sit on. Rate 4 is 70 to 90 percent of root tips colonized, dense throughout with glomerules. A rate 1 tree (1 to 10 percent, “few mycorrhizas difficult to find”) sits closer to Turley’s naked stock than to a rate 4 tree.
North Carolina State University’s Truffle Lab published a grower service at $130 per soil or root sample to evaluate approximate Tuber colonization, results in 15 business days. As of June 2026 that lab was closed. The method still exists at other independent labs. Guerin-Laguette’s New Zealand quality-control work, in Mycoscience 2021, found T. borchii mycorrhizae on seedlings inoculated with T. melanosporum or T. aestivum when species shared a greenhouse: 20 to 70 percent of tested seedlings in seven of nine batches before physical separation. A paper certificate that names only the intended species, with no microscopy count and no DNA, is an incomplete work order.
How far apart do you plant truffle trees, and how much water do they use?
Spacing is one of the places the sources refuse to agree, and the disagreement is not rounding. Inotruf’s common patterns are 5 × 5 m, 6 × 6 m, 6 × 5 m, and quincunx variants, “densities per hectare from about 250 plants to just over 400.” Magarzo et al. used 5 × 5 m, 400 plants per hectare. Kaiser and Ernst write that optimal density “is much debated, with planting sizes ranging from 100 (or fewer) trees per acre to as many as 1,000 trees per acre.” One hundred trees per acre is about 247 per hectare, inside Inotruf’s band. One thousand per acre is about 2,470 per hectare, six times Inotruf’s upper common density. Do not average 400 per hectare and 1,000 per acre.
Irrigation volume is better documented, and still site-specific. For the first and second year, Inotruf puts supplemental irrigation at 5 to 15 liters per plant. For production, the same guide advises 20 to 30 mm (20 to 30 liters per square meter); texture, depth, and evapotranspiration set the interval. Magarzo et al. ran a head-to-head in Burgos from April to October 2021, 60 hours of irrigation. Micro-sprinklers (70 L/h, every 5 m, 0.5 m from the stem) applied 2,340 m³ that season. Drip (1 L/h emitters, 26 L/h to each brûlé) applied 870 m³. Yield, number, size, and harvest date did not differ. Average yield across 3 hectares was 11.63 kg/ha. Inotruf still calls microsprinkler the most commonly used system and treats drip as usable but “not as suitable.” Magarzo’s group called drip superior once cost entered. How long does it take to grow truffles, and what yield per hectare is documented?
First harvest is a range. Chevalier and Grente’s 1977 crop came at 4.5 years. Kaiser and Ernst put maturity at four to 12 years after planting inoculated trees, and the economic wait at five to 12 years on average. The 2024 Plant and Soil review, citing Allen et al. 2023, gives 5 to 13 years, averaging approximately 8, and adds that production “may start as early as 5 years after planting, but often first production does not occur until 7 years (or more).” Alvis wrote that the Willamette Valley budget typically began after about six years and reached full production after about 10. Brûlé, the vegetation-free “burn” under the tree, can show at three to five years in CCD-CP-83.
Annual yield per hectare is where North America and the European literature part company. Magarzo’s irrigated Spanish orchard, in the trial year, made 11.63 kg/ha. The 2024 Plant and Soil North American interviews: 1 to 39 kg/ha, average 15. Expected yields outside North America in that paper: 15 to 40 kg/ha, and over 100 kg/ha in the Chevalier and Frochot citation. Kaiser and Ernst, in pounds per acre: 25 to more than 100 at full production. Guerin-Laguette, citing Chevalier, put typical T. melanosporum near 100 kg/ha at 15 years. A U.S. landowner who budgets the 100 kg/ha line on the 15 kg/ha continent is writing a revenue number the 2024 review’s growers did not report.
Harvest is a winter job for T. melanosporum, done with a trained dog, because the ascoma sits about 6 inches down (CCD-CP-83).
